This is a food/recipe blog that my older brother started for the 3 of us to share recipes and keep stuff. Here is one of my posts.
Spicy Thai Fridge Pickles (recipe is for each pint sized jar):
- Pickling Cucumbers (about 3, cut into spears)
- Pickling Spice [Bay leaves, black and white peppercorns] (1/3 cup)
- Salt (3/4 Tablespoon)
- Squirt of Sriracha
- 3-4 Thai Chiles
- Top it off with 50% Water and 50% Vinegar mix
Let these sit in your fridge for about 5-7 days and then eat them. Adjust the level of spice to your taste, the longer they sit in the brine the spicier they will be.
